Cook for 5–7 minutes, stirring occasionally, until the strawberries soften and become syrupy.
Mix cornstarch with water, then stir into the strawberries.
Cook another 1–2 minutes until thickened. Remove from heat.
Make the Funnel Cake Batter

In a large bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, whisk eggs, milk, and vanilla extract.
Pour wet ingredients into dry ingredients and mix until smooth.
Fry the Funnel Cake Bites

Heat about 2 inches of oil in a deep pan to 350°F (175°C).
Drop spoonfuls of batter carefully into the hot oil.
Fry for 2–3 minutes, turning occasionally, until golden brown.
Remove and place on paper towels to drain excess oil.
Assemble

Pile the warm funnel cake bites onto a serving plate, dust generously with powdered sugar, and spoon the strawberry topping over the top. Add whipped cream if desired.
