Slow Cooker Apple Cinnamon Pork Chops

Instructions

  1. Season the pork chops with salt, pepper, garlic powder, and thyme.
  2. Heat olive oil in a skillet over medium-high heat and sear the pork chops for 2–3 minutes per side until lightly browned.
  3. Place the sliced onions in the bottom of the slow cooker.
  4. Arrange the pork chops over the onions.
  5. In a small bowl, mix the chicken broth, brown sugar, cinnamon, and nutmeg. Pour over the pork chops.
  6. Scatter the apple slices evenly over the top.
  7. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the pork is tender and fully cooked.
  8. For a thicker sauce, mix the cornstarch and water into a slurry. Stir it into the slow cooker during the last 20–30 minutes of cooking.
  9. Serve warm with mashed potatoes, rice, or roasted vegetables.

Tips

  • Use tart apples for a sweet-and-savory contrast.
  • Add a handful of dried cranberries for extra fall flavor.
  • Leftovers taste even better the next day.
